How to make it

  • Dice up whatever ingredients you decide to use. You can even add mustard, relish, liquid smoke, or salsa to the mixture, just keep it thick or it will run out the ends of the sausage.
  • Ok, this is pretty easy. Take each sausage and give it a roll across a cutting board just to straighten it out. DO NOT FLATTEN!
  • Try to find the end of the sausage with the open end of the casing.
  • Use a wooden or plastic cooking spoon with round handle to run a hole through the sausage from end to end.
  • Use your thumbs to enlarge the holes just a bit.
  • Take your stuffing mixture and add bit by bit until sausage is stuffed all the way through. It doesn't take a whole lot.
  • Pinch the ends and repeat until finished.
  • Toss them on the grill!!

    Fantastic idea! I'm thinking a bit of chopped sundried tomatoes with a touch of minced garlic and some grated cheese....maybe a touch of chopped basil, too!! (I know -- warped tastebuds LOL!)
