Ingredients

How to make it

  • In a large pot start browning sausage in olive oil.
  • While browning sausage put cauliflower through food processer on shred.
  • When sausage is lightly golden add onion, garlic, and green pepper.
  • Saute veggies until onion is translucent.
  • Add tomatoes, broth, thyme, and bring to simmer. Simmer for 20 minutes uncovered.
  • Add the cauliflower and simmer for another 15 minutes until tender.
  • Add shrimp and simmer for 5 minutes or so just long enought to cook the shrimp.
  • Add salt and pepper and tabasco to taste. Serve.

    Tried it last night; most excellent! Thanks for the recipe. I couldn't find andouille sausage on short notice so I used merguez sausage as a substitute. Replacing the rice of a traditional jambalaya with cauliflower is a great idea and a tasty one, too. I'll recommend this recipe.

    This was excellent. We made it a couple of weeks ago and lost the recipe. So we winged it last night. Close but not quite. So glad I found it again. Using the ground up cauliflower fakes me out. I really think its rice!
