Ingredients
  • 6 tablespoons of butter at room temperature
  • 2 large onions, peeled and thinly sliced
  • 8 slices of rye bread
  • 1 1/2 pounds ground beef chuck
  • 8 slices of Swiss cheese
  • salt
  • pepper

Directions
  1. Melt 3 tablespoons of butter in a large skillet, preferably cast iron, over medium heat.
  2. Add the onions and cook, stirring occasionally until caramelized, about 20 minutes.
  3. Remove onions from pan and set aside.
  4. Lay rye bread flat on waxed paper on a baking sheet.
  5. Butter each slice of bread on the top side, dividing one tablespoon of the remaining butter among the 8 slices.
  6. Use less butter if wanting to cut down on calories.
  7. Flip them over and butter the other sides of the 8 slices, dividing the one tablespoon of butter among them.
  8. Reheat the skillet that cooked the onions.
  9. Toast bread on both sides in the skillet, until the bread is light gold, about 1 minute per side.
  10. Set the bread aside.
  11. Divide beef into 4 evenly sized pieces.
  12. Shape each into a patty about 1/2 inch thick.
  13. Season both sides of the patties with salt and pepper.
  14. Cook the patties about 3 minutes per side for medium-rare .
  15. Remove from skillet and assemble sandwiches.
  16. Lay out 4 slices of the toasted bread.
  17. Top each with 1/4 of the onion mixture, then a slice of cheese, a beef patty, and a second slice of cheese.
  18. Top with the remaining 4 toast slices.
  19. Melt the remaining 1 tablespoon of butter in pan.
  20. Toast sandwiches on both sides, about 1 minute per side, until cheese is melted and toast is a golden color.
  21. Serve immediately.

We always serve these with Thousand Island dressing. Yummy


I like to make these quite a bit. Looks like you make them the same as I usually do, but sometimes we mix it up with different cheeses and breads.
