White Garlic Pasta Recipe
This is a cross between lasagna and baked ziti. Great for a pot luck or a buffet.

Ingredients
  • 1 1/2 pounds bulk Italian sausage (sweet or hot)
  • 4 cloves garlic, minced
  • 1 sweet onion, finely chopped
  • 1 (12 ounce) jar roasted red peppers, drained and chopped
  • 1/2 cup white wine
  • 1 (10 ounce) package frozen chopped spinach, cooked and drained
  • 15 ounces roicotta cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 egg, beaten
  • 2 (16 ounce) jars prepared Alfredo sauce
  • 1 1/2 pounds small pasta, cooked and drained (I like mini penne)
  • 12 ounces Mozzarella cheese, sliced
  • 1 cup Parmesan cheese, grated

Directions
  1. In large skillet, brown sausage. Remove with slotted spoon and set aside. Drain skillet, reserving 1 tablespoons sausage drippings.
  2. Add onion to skillet. Saute until softened. Add garlic and saute 1 minute or until fragrant. Return sausage to skillet. Add red peppers and wine.
  3. Bring to a boil. Reduce heat and cook until most of the liquid is evaporated.
  4. Combine spinach, ricotta cheese, salt, pepper and egg.
  5. Spread 1 cup Alfredo sauce over bottom of greased 13x9 inch baking pan.
  6. Top with one-third of the pasta.
  7. Top with half the ricotta mixture and half the sausage.
  8. Spread with a good layer of sauce.
  9. Repeat.
  10. Layer with remaining pasta and top with sauce.
  11. Layer with Mozzarella cheese slices.
  12. Cover and bake at 350 degrees for 45 minutes.
  13. Uncover and bake 15 minutes.
  14. Let stand 15 minutes before serving.
