tom kha kai thai chicken with coconut milk

- 300 grams of, chicken thigh, cut into small pieces shopping list
- 6 garlic cloves, minced shopping list
- 3 shallots, minced shopping list
- 2 whole chilli shopping list
- 6 kaffir lime leaves shopping list
- 1 cup cilantro/ coriander leaves and roots, finely chopped shopping list
- 2 stalks lemon grass, bruised shopping list
- 1 piece of galangal, brused shopping list
- pinch of white pepper shopping list
- pinch of salt shopping list
- 1 can coconut milk shopping list
- 5 Tbs of fish sauce shopping list
- 5 Tbs of lime juice shopping list
- 1 grated lime zest shopping list
How to make it
- with 1 tbs of oil saute garlic, shallot, until fragant
- add Kaffir lime leaves, chopped cilantro/ coriander, lemon grass, and galangal
- add the chicken pieces, stir until chicken changes colour
- add coconut milk, fish sauce, salt and pepper, keep stirring for around 15 minutes, taste if your chisken is tender add chilli
- stir in the lime juice and zest, serve

I made this a couple of nights ago.. I think I'd try it again, but using 1 Tbs of fish sauce instead of 5. I ran out partway through and had 3 T, and that was way too much. I also added a teaspoon or two of chili oil at the end, rather than the chili...more
