I had my first tom kha kai in indonesia (not in thailand) and I order everytime I go to a thai restaurant here in taiwan, in some restaurant they use chicken breast
but my thai fried uses chicken thigh, and it's fantastic

I made this a couple of nights ago.. I think I'd try it again, but using 1 Tbs of fish sauce instead of 5. I ran out partway through and had 3 T, and that was way too much. I also added a teaspoon or two of chili oil at the end, rather than the chilies, similar to the way I've had it served in restaurants. It came out nicely. Thanks!
