How to make it

  • Heat oil over medium heat in an extra-deep, 12-inch nonstick skillet that has a lid.
  • Peel and coarsely chop the onion, adding it to the skillet. Add the green pepper to the skillet. Add garlic.
  • Cut sausage into 1/4-inch thick slices, adding them to skillet. Add the tomatoes, chicken broth and rice. Bring the mixture to a boil, then reduce heat to medium.
  • Add black pepper, thyme and oregano. Cover skillet and cook 4 minutes. Rinse and drain both cans of beans.
  • After rice has cooked 4 minutes, gently stir in beans. Continue to cook 2 minutes or until beans are hot. Season with Tabasco sauce to taste, if desired.

    I made this as a side for tonight and am serving it with grilled chicken. Because it is a side I left out the Kielbasa. I only had 2 cans of light kidney beans so I used them and I used diced canned tomatoes instead of stewed tomatoes. It is Fantastic!! I think it would also be good with black beans. Thanks, Ferri
