Quick Cajun Rice Skillet

- 1 tsp vegetable oil shopping list
- 1 cup chopped onion shopping list
- 1 cup green pepper, chopped shopping list
- 1 tsp minced garlic shopping list
- 1 package (14 oz) kielbasa shopping list
- 1 can (14 1/2 oz) stewed tomatoes shopping list
- 1 can (14 1/2 oz) chicken broth shopping list
- 1 3/4 cups Minute Rice shopping list
- 1/2 tsp black pepper shopping list
- 1/2 tsp dried thyme shopping list
- 1/2 tsp dried oregano shopping list
- 1 can (15 oz) great northern beans shopping list
- 1 can (15 oz) kidney beans shopping list
- Tabasco sauce to taste, optional shopping list
How to make it
- Heat oil over medium heat in an extra-deep, 12-inch nonstick skillet that has a lid.
- Peel and coarsely chop the onion, adding it to the skillet. Add the green pepper to the skillet. Add garlic.
- Cut sausage into 1/4-inch thick slices, adding them to skillet. Add the tomatoes, chicken broth and rice. Bring the mixture to a boil, then reduce heat to medium.
- Add black pepper, thyme and oregano. Cover skillet and cook 4 minutes. Rinse and drain both cans of beans.
- After rice has cooked 4 minutes, gently stir in beans. Continue to cook 2 minutes or until beans are hot. Season with Tabasco sauce to taste, if desired.

I made this as a side for tonight and am serving it with grilled chicken. Because it is a side I left out the Kielbasa. I only had 2 cans of light kidney beans so I used them and I used diced canned tomatoes instead of stewed tomatoes. It is Fanta...more
