Ingredients
  • 1 tsp vegetable oil
  • 1 cup chopped onion
  • 1 cup green pepper, chopped
  • 1 tsp minced garlic
  • 1 package (14 oz) kielbasa
  • 1 can (14 1/2 oz) stewed tomatoes
  • 1 can (14 1/2 oz) chicken broth
  • 1 3/4 cups Minute rice
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 can (15 oz) Great Northern beans
  • 1 can (15 oz) kidney beans
  • Tabasco sauce to taste, optional

Directions
  1. Heat oil over medium heat in an extra-deep, 12-inch nonstick skillet that has a lid.
  2. Peel and coarsely chop the onion, adding it to the skillet. Add the green pepper to the skillet. Add garlic.
  3. Cut sausage into 1/4-inch thick slices, adding them to skillet. Add the tomatoes, chicken broth and rice. Bring the mixture to a boil, then reduce heat to medium.
  4. Add black pepper, thyme and oregano. Cover skillet and cook 4 minutes. Rinse and drain both cans of beans.
  5. After rice has cooked 4 minutes, gently stir in beans. Continue to cook 2 minutes or until beans are hot. Season with Tabasco sauce to taste, if desired.

Holy Mackeral.... this sounds good...I need to see a picture of this.....

I made this as a side for tonight and am serving it with grilled chicken. Because it is a side I left out the Kielbasa. I only had 2 cans of light kidney beans so I used them and I used diced canned tomatoes instead of stewed tomatoes. It is Fantastic!! I think it would also be good with black beans. Thanks, Ferri

FANTASTIC I LOVE IT . AND ALL THE GREAT SPICES THANK YOU
