28 years ago my then 2 year old son decided to quit veggies. His favorite book was Green Eggs and Ham. So one morning I got an idea to blend green beans with eggs. He loved it! All 5 of my children got veggies this way and now my grandkids do.

I will have to try this out for myself. I love omelets and I think this can be converted into one using the ham and cheese as the filling.

What a great idea. I have two daughters, one who will eat anything and the other that takes 20 minutes to eat one (1) green bean and it has to have ketchup too! To boot, she asked just the other day if she could have green eggs and ham on St. Patty's Day, wont she be surprised! :) I'll keep you posted! Thanks for the recipe....

My grand-daughters favorite book is also Green Eggs and Ham. I thought of putting food coloring in her scrabled eggs, but she will not eat vegetables either and I think this is a clever idea to get some veggies in her. Thanks,
Paula
