Great recipe that is low carb. We just absolutely love this - and who doesn't love the added bacon!

Ingredients
  • 4 strips of bacon
  • 1 C sliced red onion
  • 2 C sliced mushrooms
  • 2 tsp minced garlic
  • 1 C thinly sliced apple
  • 1/4 C water
  • 8 C chopped Swiss Chard
  • Dash salt, to taste
  • Dash pepper, to taste
  • Drizzle of cider vinegar

Directions
  1. Fry bacon until crispy and set aside.
  2. In the same pan, saute onion, mushrooms, and garlic.
  3. Cook for about 3 minutes.
  4. Add apple, toss, and cover.
  5. Cook for about 3 minutes.
  6. In another large pot, bring water to a boil.
  7. Add Swiss Chard
  8. Toss until wilted
  9. Drain
  10. Stir in hot mushroom mix.
  11. Season with salt, pepper, and cider vinegar.
  12. Garnish with warm bacon.

Love my chard... I planted mine about a week ago.. waiting for it to get big enough to pick...


This sounds pretty good. I've tried wilted lettuce with bacon bits and the hot grease poured over. Never heard of it until I moved to Mn. or rhubarb either. Love rhubarb pie and sauce over biscuits.
