Chocolate Eclair Cake Recipe

Ingredients

1 box graham crackers

2 small boxes of vanilla instant pudding

3 cups cold milk

8 ounces cool whip

---------------------------------------------------------------------------------------------

frosting;

4 Tbs. cocoa

2 Tbs. vegetable oil

2 tsp. vanilla extract

3 Tbs. softened butter

2 Tbs karo syrup

1 1/2 cups confectioner's sugar

3 Tbs. milk

Directions

butter a 13" X 9" dish

line bottom with gaham crackers

mix pudding with milk; add cool whip, mix and spread 1/2 over crackers, place anouther layer of crackers and spread remainder of pudding mixture over the crackers, place a third layer of crackers.

refrigerate for 2 hours.

frosting;

beat all of the ingredients for frosting until smooth.

frost and refrigerate for 24 hour.

cut and serve

Oh this is soooo good, I use to fix this alot when I could get the liquid chocolate in the little packs. That's what my recipe called for to make the frosting. YUM! Great post.
