Ingredients
  • 1 box yellow cake mix
  • 1 (17oz) can fruit cocktail with syrup
  • 1 cup coconut
  • 2 eggs

Directions
  1. Preheat oven to 350.
  2. Blend above ingredients. Beat 2 minutes at medium speed.
  3. Pour into a greased 9x13-inch cake pan.
  4. Bake for 45 minutes.
  5. Ugly Duckling Frosting
  6. 1 cup brown sugar
  7. 1/4 cup evaporated milk
  8. 1 stick margarine
  9. 1 cup coconut
  10. In a saucepan, combine brown sugar, milk and margarine. Cook 5 minutes over medium heat, stirring constantly. Remove from heat and stir in coconut. Pour over cake.

I like such ideas..I am sure the taste is wonderful.


I just made this last night- and even took a pic. I wanted something sweet and just grabbed the coconut bag and made the recipe on the back! I was checking to see if anyone had already listed this. I cannot express how good and moist this cake is. It is so easy to make. I even used a large can of peaches instead of the smaller can of fruit cocktail. (But then again, I'm notorious for altering recipes....)
My recipe said to cook the icing for only 1 minute instead of 5. It still worked.
