Lentil and Pea Soup With Bourbon

- 1 onion, chopped shopping list
- 1 bell pepper, chopped shopping list
- 3 cloves of garlic, sliced shopping list
- 2 carrots, cut in rounds shopping list
- 1/2 cup green split peas shopping list
- 1/2 cup red lentils (or yellow split peas) shopping list
- 2 tsp fresh rosemary, chopped (or dried) shopping list
- 1 tsp crushed red pepper/ pepper flakes shopping list
- 1/2 tsp black pepper shopping list
- 1/2 tsp paprika or red chili powder shopping list
- salt shopping list
- 2 tbsp olive oil or butter shopping list
- 6 cups of vegetable stock or beef broth/ or if you prefer, just water shopping list
- THE most important ingredient 1/2 cup bourbon (use a good quality) shopping list
- **When using a regular pot, boil peas and lentils for an hour or soak in water overnight.** shopping list
How to make it
- -Heat the oil in a big pot and add onion, garlic, and pepper. Stir until onions are cooked
- -Add carrots and 1 tsp rosemary, and cook for 4-5 minutes
- -Add paprika and stir for a minute
- -Put in split peas, lentils, bourbon, broth, black pepper, crushed pepper, and salt.
- With a regular pot, cook for 45 minutes on medium heat
- -I used a hand blender to puree the soup and garnished it with the rest of the rosemary. If you want to have it chunky, you may want to cut everything into smaller pieces, especially the carrots.
- Serve with crusty bread and can be stretched to 8 mugs if serving for a crowd (Tailgate).
