This is a great vegetable casserole for during the week, weekends or potluck. It can be a main meal with a fresh loaf of bread or a side dish.

Ingredients
  • 1 large tomato, halved then thinly sliced
  • 1 sweet onion, halved then thinly sliced
  • 1/2 tsp. pepper
  • 1 tsp. onion powder
  • 1 Tbsp. parsley, fresh or dried
  • 1/2 cup Bisquick biscuit mix or whatever biscuit mix is available to you
  • 1 (10 ounce) package frozen chopped broccoli, thawed and drained of any moisture
  • Note: I also like to use Broccoli Romanesco
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup butter, melted
  • 2-3 eggs, beaten
  • 1 cup sour cream
  • 1 cup small curd cottage cheese

Directions
  1. Arrange the broccoli in a greased 8 inch square Pyrex baking dish.
  2. In a large mixing bowl beat biscuit mix, sour cream, cottage cheese, pre-beaten eggs, melted butter. pepper. onion powder and parsley.
  3. Pour over broccoli.
  4. Arrange tomato and onion slices over top.
  5. Sprinkle with Parmesan cheese.
  6. Bake, uncovered, at 350 degrees F for 35-40 minutes or until a knife inserted in the center comes out clean.
  7. Allow to set for at least 5 minutes before cutting.

I love broccoli just about any way it can be cooked. This sounds wonderful, and I can't wait to try it!
