Cheesy Veggie Casserole

- 1 large tomato, halved then thinly sliced shopping list
- 1 sweet onion, halved then thinly sliced shopping list
- 1/2 tsp. pepper shopping list
- 1 tsp. onion powder shopping list
- 1 Tbsp. parsley, fresh or dried shopping list
- 1/2 cup Bisquick biscuit mix or whatever biscuit mix is available to you shopping list
- 1 (10 ounce) package frozen chopped broccoli, thawed and drained of any moisture shopping list
- Note: I also like to use broccoli Romanesco shopping list
- 1/2 cup grated parmesan cheese shopping list
- 1/4 cup butter, melted shopping list
- 2-3 eggs, beaten shopping list
- 1 cup sour cream shopping list
- 1 cup small curd cottage cheese shopping list
How to make it
- Arrange the broccoli in a greased 8 inch square Pyrex baking dish.
- In a large mixing bowl beat biscuit mix, sour cream, cottage cheese, pre-beaten eggs, melted butter. pepper. onion powder and parsley.
- Pour over broccoli.
- Arrange tomato and onion slices over top.
- Sprinkle with Parmesan cheese.
- Bake, uncovered, at 350 degrees F for 35-40 minutes or until a knife inserted in the center comes out clean.
- Allow to set for at least 5 minutes before cutting.
