Chicken Stroganoff

- 2 Tablespoons olive oil or butter shopping list
- 2 garlic cloves, chopped fine shopping list
- 1 onion, chopped or thinly sliced shopping list
- 1/2 yellow pepper, thinly sliced shopping list
- 10 mushrooms (Button or Cremini) Thinly sliced shopping list
- 3-4 boneless, skinless chicken Breasts (sliced into 1/2 inch strips) shopping list
- 1 Cup Dry While wine shopping list
- 1 Cup chicken broth shopping list
- 2 Tbs Worchestershire Sauce shopping list
- 1 Tablespoon Dijon mustard shopping list
- 1/3 Cup flour for thickening shopping list
- 1/2 Cup sour cream (Can use 1/3 Cup regular cream instead) shopping list
- 1 teaspoons salt shopping list
- 1/2 teaspoon black pepper shopping list
- 12 Ounces Extra wide egg noodles shopping list
How to make it
- Heat 1 Tablespoon of olive oil in a large saute pan over medium heat. Add the onions and garlic and saute, stirring frequently, about 6-7 minutes until soft. Add yellow pepper and mushrooms. Using half the salt & pepper, season the vegetables. Remove the vegetables from the pan and set aside. Season the chicken pieces with the remaining salt & pepper. Saute the chicken in batches until golden brown and cooked through, about 6 minutes. Remove the chicken from the pan and set aside with vegetables. Add the wine and heat. Mix the flour with some of the broth then add to the chicken mixture and stir to blend together. Add Worchestire and mustard. Heat and stir until thickened. Reduce heat and stir in sour cream. Return vegetables and chicken back to the pan with the sauce and simmer until heated through.
- While you are preparing this, prepare noodles according to directions on package.
