I was looking for a different way to cook chicken and came up with this one. It was so yummy, I liked it even better than my beef stroganoff recipe. I served garlic asparagus and french bread along with it.

Ingredients
  • 2 Tablespoons Olive Oil or Butter
  • 2 Garlic Cloves, chopped fine
  • 1 Onion, chopped or thinly sliced
  • 1/2 Yellow Pepper, thinly sliced
  • 10 Mushrooms (Button or Cremini) Thinly sliced
  • 3-4 boneless, skinless Chicken Breasts (sliced into 1/2 inch strips)
  • 1 Cup Dry While Wine
  • 1 Cup chicken broth
  • 2 Tbs Worchestershire Sauce
  • 1 Tablespoon Dijon Mustard
  • 1/3 Cup Flour for thickening
  • 1/2 Cup Sour Cream (Can use 1/3 Cup regular cream instead)
  • 1 teaspoons Salt
  • 1/2 teaspoon Black Pepper
  • 12 Ounces Extra Wide Egg Noodles

Directions
  1. Heat 1 Tablespoon of olive oil in a large saute pan over medium heat. Add the onions and garlic and saute, stirring frequently, about 6-7 minutes until soft. Add yellow pepper and mushrooms. Using half the salt & pepper, season the vegetables. Remove the vegetables from the pan and set aside. Season the chicken pieces with the remaining salt & pepper. Saute the chicken in batches until golden brown and cooked through, about 6 minutes. Remove the chicken from the pan and set aside with vegetables. Add the wine and heat. Mix the flour with some of the broth then add to the chicken mixture and stir to blend together. Add Worchestire and mustard. Heat and stir until thickened. Reduce heat and stir in sour cream. Return vegetables and chicken back to the pan with the sauce and simmer until heated through.
  2. While you are preparing this, prepare noodles according to directions on package.
