BBQ Tofu Squares Recipe
My son saw on Yo Gabba Gabba that they were eating "square snacks" and we had recently found he may have a milk allergy. So this was a solution to both. Serve with cumin flavored brown rice and some steamed veggies.

Ingredients
  • 1 block extra firm tofu
  • 1/2 bottle BBQ Sauce (I suggest Sweet Baby Ray's)
  • cooking spray

Directions
  1. Drain and press your tofu - I'm really not even sure I did it right but it worked! Just take the block out and wrap it in quadruple thick papertowel on a plate. Cover with a weighted pan (I used my cooking brick) for about 10 minutes. Flip it over and repeat. This just takes out some of the excess moisture from the tofu.
  2. Cut the tofu into squares. I cut long ways into about 6 slices and then cut each slice in 4's.
  3. Marinate the tofu in BBQ Sauce in a solid side dish - no baggies! Mine sat for over a day since we only cook a few pieces at a time but even an hour is good!
  4. Preheat oven to 400
  5. Spray a foil lined baking sheet with cooking spray and arrange marinated tofu close together and in a single layer
  6. Bake for about 10 minutes turning the heat to 450/500 for the last 3-5 minutes to get the nice crunchy edges!
