Ricotta Cheese Cookies

These cookies are so yummy-very sofr and cake-like. I always get requests for the recipe when I make them. They have a confectioner's sugar glaze that you can decorate for seasons, etc. Nice cookies.
Ingredients
- 2 well beaten eggs shopping list
- 2 c. sugar shopping list
- 1/2 lb. butter shopping list
- 2 tsp. vanilla shopping list
- 1 lb. ricotta cheese shopping list
- 4 c. flour shopping list
- 1 tsp. baking soda shopping list
- FROSTING: shopping list
- 3 c. powdered sugar shopping list
- 3 tbsp. milk shopping list
- 1 1/2 tsp. vanilla shopping list
- 1/3 c. Crisco shopping list
How to make it
- Cream eggs, sugar and butter together.
- Add remaining ingredients and mix by hand. Do not use electric mixer.
- Drop by teaspoons onto lightly greased cookie sheet.
- Bake 350 degrees 10 minutes.
- Mix frosting ingredients and beat til smooth.
- Cool and ice. Food coloring can be added to frosting.
- Decorate with colored sugars or sprinkles to suit the season...while the frosting is still wet, it does dry quickly, so hurry!
