This side dish goes along perfectly for any BBQ and especially with some fried chicken!

Ingredients
  • 6 lbs potatoes
  • 1 medium sized onion, diced
  • 5 eggs
  • pickle relish
  • pickle juice
  • miracle whip-to taste
  • mustard-to taste

Directions
  1. Peel and cube potatoes.
  2. Put in pot, cover with water, and boil til potatoes are fork tender.
  3. Drain and place potatoes in large bowl-place in fridge to cool.
  4. Boil eggs and dice when done.
  5. Put eggs in with potatoes (stir to mix up well.)
  6. Put in pickle relish about 2-3 Tablespoons or to your own personal taste-stir to mix up well.
  7. Place diced up onion in with mixture and again mix well.
  8. Put in Miracle Whip (I use about 2 cups) and mix in well into mixture.
  9. Pour in pickle juice, to taste, I use about 3 teaspoons-mix into mixture well.
  10. Put in Mustard, again to taste, but I do two swirls.
  11. Mix all together well and place in fridge to cool-about 2 hours at least!
