How to make it

  • Preheat oven to 400 degrees F.
  • Press dough into bottom and up sides of a 10-inch removable-bottom tart pan. Line bottom of dough with a piece of foil; arrange pie weights or dried beans on foil. Bake at 400 degrees F for 5 minutes. Remove pie weights and foil. Bake an additional 5 minutes. Cool on a wire rack.
  • Combine rhubarb, 1/2 cup sugar, cornstarch, water, and 1/2 teaspoon cinnamon in a medium saucepan. Bring to a boil; reduce heat, and simmer 5 minutes or until rhubarb is tender, stirring frequently. Remove from heat, and stir in strawberries. Spoon strawberry mixture into prepared crust. Combine 1/4 teaspoon cinnamon and 1 tablespoon of sugar; sprinkle evenly over tart.
  • Place tart on a baking sheet. Bake at 400 degrees F for 30 minutes or until filling is set. Cool on a wire rack.

    Hey, made this today and I have to say that it is a great recipe!
    I used my own scratch pie crust, and blind baked it by poking holes just in the surface of the crust - not all the way through, instead of using weights or beans, and it came put perfectly.

    Strawberry -Rubarb---my favorite---thanks for sharing---I actually have a plant in my garden that will soon be ready for picking. I visited my Aunt in PA last spring and she dug me up a plant to bring home. It is so cool having it in my yard--fond reminders of growing up with rhubarb in the garden!!! Your photos are wonderful!!!

    Unfortunately I shall be unable to bake this for a while as I am at the moment forced to use my Microwave as my gas Stove has ben rendered obsolete owing to a gas leak and my new kitchen has had to be delayed for a few weeks, as the installers are busy at present. I just have to WAIT
