How to make it

  • 1. Bring the broth to a boil.
  • 2. Blend the cornstarch and water.
  • 3. Add to the broth slowly, stirring.
  • 4. When thickened, add the scallion.
  • 5. Stirring the soup rapidly, gradually add the beaten egg.
  • 6. Remove from the heat immediately and season with pepper.
