Ajiaco De Papas - Peruvian Cheesy Potatoes

- 3 Pounds new potatoes shopping list
- 3 cloves garlic -- finely chopped shopping list
- 1 Medium onion -- finely chopped shopping list
- 3 Tbsp. of Aji Paste or 3 Medium serrano peppers -- finely chopped shopping list
- 2 Tablespoons olive oil shopping list
- salt And Pepper -- to taste shopping list
- 1 Cup Half And Half shopping list
- 3/4 Pound queso fresco Or feta -- cubed shopping list
- 3 Medium Hard-Boiled egg -- coarsely chopped shopping list
How to make it
- Peel potatoes if desired. Boil lightly in salted water.
- When done, drain well and cube.
- Saute garlic, onion, and chiles in oil until the onion is golden.
- Add potatoes and milk.
- Stir carefully so as not to mash potatoes.
- Add cheese and eggs.
- Cook just enough to heat through and serve.
