I recently got a hold of my Nana's pineapple upside down cake recipe. This was one of my favorite "ban dulces" (sweet cakes ), she used to make.

Ingredients
  • 1 any brand yellow cake mix
  • 1 large can of sliced pineapple
  • 1 cup of maraschino cherries
  • 1 cup of brown sugar
  • Pam baking spray (use what you have on hand)

Directions
  1. Preheat oven to what the cake mix box says.
  2. follow the instructions on the cake mix.
  3. spray your pan**make sure to spray every part of the pan** (doesn't matter what size or shape you use)
  4. sprinkle the bottom of pan with brown sugar (use the whole cup of sugar)
  5. drain juice from pineapple slices, arrange slices evenly on bottom of pan
  6. add a little bit more brown sugar and again arrange cherries in the hole of the pineapple slices.
  7. bake as directed on box
  8. when cake is finished baking, let it cool down for about a hour and a half and when the cake is cool, carefully turn cake upside down onto a plate and give it a little shake or tap and hopefully the cake comes out nicely.
  9. let it stand for 3 mins and serve with pineapple ice cream and enjoy!
