Erliens Lemon Chess Pie Recipe
Besides the Oyster dish.. this was another favorite of my grandmother's recipes. It's my favorite pie.

Ingredients
  • 9 inch unbaked pie shell
  • Zest of 2 lemons
  • 1-1/2 Cups sugar
  • 4 eggs
  • 1/4 cup milk (she used whole milk)
  • 1/3 cup fresh lemon juice
  • 2 Tbsp cornstarch
  • 1 Tbsp flour
  • 1/4 cup melted butter

Directions
  1. Preheat oven to 350 F
  2. Combine lemon zest, sugar, and eggs. Beat well.
  3. Add remaining ingredients and mix well.
  4. Pour into unbaked pie shell.
  5. Bake on the lower rack, 30 to 45 minutes until knife inserted in the center comes out clean.
  6. Remove and cool on wire rack, then place in refrigerator for at least 2 hours.

Pardon my ignorance. Why the word "chess"?
The only chess I can think of in cooking is the vanilla wafers called chessmen.

Your version looks very tasty! Never used corn starch in it before, but I bet it makes it a little thicker and smoother than corn meal.

Cabincrazyone, chess is probably derived from "cheese" since this kind of pie is like a cheese-less cheesecake.
