Bacon-Stuffed Cherry Tomatoes

- 1 1/2 lbs. bacon, diced shopping list
- 1/2 cup finely chopped green onions shopping list
- 1/2 cup mayonnaise shopping list
- 24 cherry tomatoes shopping list
How to make it
- Fry bacon until crisp. Drain and cool om paper towels.
- In a medium bow, mix bacon, green onions and mayonnaise.
- Remove stems from tomatoes and place them stem side down on cutting board.
- Cut a thin slice off the tops.
- With a small spoon or melon baller, scoop out pulp and discard.
- Invert tomatoes on paper towels and let stand 30 minutes to drain.
- Fill tomatoes with bacon mixture.
- Cover and refrigerate several hours or overnight.
- Makes 24 appetizers.
