How to make it

  • Peel potatoes and cut into quarters.
  • Place potatoes in water in large pan, salt and bring to boil.
  • Once boiling, reduce heat and cook potatoes for approximately 15-20 minutes. Potatoes should be cooked but not mushy.
  • While cooking potatoes boil 1 dozen eggs.
  • When done, drain potatoes and eggs, and place in fridge to cool (approximately 1 hour)
  • After cooling, cut potates into "bite size" pieces and put in large bowl.
  • Cut up 6 hard boiled eggs into "bite size" pieces and place in bowl.
  • Dice small onion and add to potatoes and eggs.
  • Add 1/2 teaspoon ground mustard
  • Add 8 oz Miracle Whip Salad Dressing and mix all ingredients together. If it looks "dry" add additional Miracle Whip.
  • Salt and pepper to taste.
  • Slice the remaining 6 hard boiled eggs and place in circle on top of potates and eggs.
  • Sprinkle with paprika.
  • Sorry .. mayonaise just doesn't work as well in this recipe.

    Much too plain. Add some dried dill, a little mayo to cut the sweetness of the Miracle Whip, celery, and relish. Much better.
