This rice dish I came up with to go with my Mexican dinner I served for family. It is really easy, simple & good! :)

Ingredients
- 4 c. Minute rice, cooked according to mfg. directions
- 1 can Rotel ( diced tomatoes & chilis)
- 5 - 1 in. slices of Velveeta cheese
Directions
- Mix Rotel and cheese into the cooked rice.
- Cook on low until cheese is melted; stir often.
- Enjoy! :)
