Hawaiian Banana Nut Bread Recipe

Fruity tropical flavored quick bread.

Ingredients
- 3 cups all-purpose flour
- ¾ teaspoon salt
- 1 teaspoon Baking soda
- 2 cups sugar
- 1 teaspoon ground cinnamon
- 1 cup chopped pecans or walnuts
- 3 eggs, beaten
- 1 cup vegetable oil
- 2 cups mashed ripe bananas
- 1 (8-ounce) can crushed pineapple, drained
- ¼ cup chopped Maraschino cherries
- 2 teaspoons vanilla extract
Directions
- Combine first 5 ingredients, stir in pecans.
- Combine remaining ingredients: add to flour mixture, stirring just until dry ingredients are moistened.
- Spoon batter into 2 greased and floured 8½ - x 4½ - x 3-inch loaf pans.
- Bake at 350ºF for 1 hour 10 minutes or until wooden pick inserted in center comes out clean.
- Cool in pans 10 minutes, remove from pans, and let cool on wire racks.
- Yield: 2 loaves

I substituted half a cup of applesauce for half a cup of the oil and reduced the rest of the oil to 2 tablespoons just to lighten it up a bit. Came out great!
