Ingredients
  • bag (s) of vanilla chips---they look like chocolate chips except they are white
  • toasted almonds, unsalted
  • dried cranberries

Directions
  1. lightly butter a pan I like to use a 9 x 9 inch or a 9 x 13 inch.. but you can just put on a cookie sheet
  2. warm the pan so the candy doesn't set up too fast
  3. put the chips in a microwave safe bowl.. I use a large pyrex measuring cup
  4. microwave just until chips start to melt. take out and stir
  5. put back in microwave you want the chips to be liquidy
  6. work fast... put a thin layer of the melted chips all over the bottom of the pan
  7. put nuts on top in a single layer and then sprinkle with the cranberries...
  8. push the cranberries inbetween the nuts
  9. pour a layer of the melted chips over the top of nuts and cranberries
  10. the layer doesn't have to be thick but make sure the nuts are covered
  11. when it gets hard randomly break into pieces.

This would be good at Xmas time! I made peppermint bark this Xmas and used white chocolate from Trader Joe's....they always have lots of different chocolates for baking...or melting!


I'm always on the look-out for cranberry recipes. zena could testify to that. I'm always bookmarking, and bragging on any that she posts!...just as I will yours!

Thank you, Peeta for the recipe and thanks for joining the Cranberry group as well! I love your recipe. I have made this before but used salted almonds. It was good. The salt actually makes the dried cranberries taste sweeter. I guess I'll have to make a batch of this tonight since I have the chips in stock. Yippee!!


I made this last night to add to Christmas gift of baked goodies - it turned out perfectly! To speed up the process (I was worried it would harden before i got to do everything), i just added the almonds and cranberries directly to the melted white chocolate and then poured the mixture onto wax paper. I also melted some dark chocolate chips to drizzle on top and it looked great! I'm very excited to have found such an easy recipe that looks and tastes impressive! Thanks for sharing :)
