Mexicali Meat Loaf

- Large corn husks (soak husk well, dry with paper towels, then flatten before using) shopping list
- 1 1/2 lbs. lean ground beef shopping list
- 1 cup bread crumbs shopping list
- 1/4 cup chili sauce ( I used Heinz chili sauce) shopping list
- 1/4 cup chopped fresh cilantro shopping list
- 2 large eggs shopping list
- 1 medium yellow onion, sliced shopping list
- 2 roasted red peppers, halved shopping list
- 4 jalapeno peppers (stems removed, if you want less heat remove seeds and stuff with black olives) shopping list
- 2 cups frozen corn kernels shopping list
- 2 cups canned black beans, drained and rinsed shopping list
How to make it
- Prepare corn husks according to package directions. Preheat oven to 350.F. Line a 9 x 5-inch loaf pan with corn husks.
- In a large bowl, combine beef, read crumbs, chili sauce, cilantro, and eggs. Mix well. Spray a medium nonstick skillet with cooking spray. Add onion; cook, stirring, over medium heat until golden, about 10 minutes.
- On a sheet of waxed paper, shape beef mixture into a 7x 4-inch rectangle. Press red peppers on top. Spoon onion over red peppers. Arrange jalapeno peppers down center.
- Starting with a long side, roll up meat loaf jelly-roll style.
- Place, seam-side down, in prepared pan. Fold corn husks over meat loaf. Bake until cooked through, about 1 hour.
- Transfer pan to wire rack; let stand 10 minutes.
- Meanwhile, in a small saucepan over medium heat, cook corn and beans for 5 minutes. Spoon corn mixture onto serving platter. Place meat loaf in center. Fold back corn husks. Serve immediately.
