A pretty cake to serve for winter!! What else but a snowball cake!!!

Ingredients
  • 2 packs of unflavored gelatin( 2 tablespoons)
  • 1/4 cup cold water
  • 1 cup boiling water
  • 3/4 cup sugar
  • 1 tablespoon lemon juice
  • 1can (20 oz) crushed pineapple drained
  • 1 (16oz) container of frozen whipped topping thawed
  • 1 (8 in) angel food cut cut into cubes
  • 2 cups flaked coconut

Directions
  1. In a large bowl , sprinle gellatin over cold water
  2. let stand for 1 minute
  3. add boiling water and stir until gelatin is dissolved
  4. stir in the sugar and lemon juice and stir until the sugar is dissolved
  5. add pineapple
  6. refrigerate until its partially thickened( about 20 minutes)
  7. stir in 4 cups of the whipped topping
  8. Line a 3 quart ROUND bowl with plastic wrap
  9. spoon about 2 cups of the pineapple mixture into the bowl
  10. Layer with half of the cake cubes and half of the remaining pineapple mixture
  11. repeat layers
  12. Refrigerate for at least 4 hours ( can be made the night before)
  13. unmold onto a serving plate
  14. spread the remaing whipped topping over the cake and sprinkle with the coconut
  15. Enjoy!!!
