this makes a lot, I cut it down since it is just the two of us now

Ingredients
  • 4 cups flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup shortening
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 can (20 ounces) crushed pineapple, undrained
  • 1 1/2 tsp vanilla
  • 1/2 cup flaked coconut

Directions
  1. Preheat oven to 350 degrees
  2. In a medium bowl, combine flour, salt, soda and powder.
  3. In a large bowl, cream shortening and sugars until light and fluffy. add eggs, pineapple, and vanilla; beat thoroughly.
  4. gradually add the flour mixture.
  5. Drop by teaspoonfuls onto cookie sheets that have been coated with non stick spray.
  6. Sprinkle each cookie with a pinch of cooconut.
  7. Bake 12-15 minutes or until golden.
  8. cool lightly and remove from pan.
  9. rum extract can be substituted for the vanilla extract
