How to make it

  • Chop chicken super fine. I like to put about half of it in the food processor and get it almost to a paste and then have the other half choppped into small chunks, I think this is a nice way to get a good texture.
  • mix all ingredients and drop teaspoon size balls onto a silpat or greased baking sheet.
  • Bake at 450 until slightly golden
  • These hold up well in soups and sauces.
  • Enjoy!

    I used them in Italian wedding soup, it worked very well. I think I ate about 10 of the meatballs before I even got the soup started!

    I got the silpat for christmas, it is one of my favorite things in my kitchen now.
    Get one, they are pretty cheap.

    i saw someone using a silpat on t.v. the other day. i'm gonna have to get me one of those.

    this sounds good. i'm gonna try it sometime. maybe add them to some chicken broth with rice or some kind of small pasta.
