North Carolina Yam Muffins Recipe

This recipe is from the *In Good Taste* cookbook....I have not made these muffins...

Ingredients
- 1 cup yams, mashed
- 1 to 2 cups sugar
- 1 cup oil
- 4 eggs, beaten
- 3 cups self rising flour
- 1 cup raisins
- 1 cup pecans, chopped
Directions
- Combine yams, sugar, oil and eggs.
- Add flour and blend until just moistened.
- Fold in raisins and nuts.
- Spoon batter into greased muffin tins.
- Bake 15 to 20 minutes at 350 degrees.
- Batter may be refrigerated and used as needed.
- Makes 24 muffins.

I've seen several recipes for sweet potato or yam breads, muffins, etc, and they fascinate me (just because I've never made them or tasted them, so curiosity is getting the better of me!) - this recipe sounds excellent, and I think it's a good place for me to start!
