Ingredients
  • 8 to 10 plum tomatoes, coarsely chopped
  • 3 to 4 garlic cloves, chopped in half
  • ½ bunch of fresh cilantro, coarsely chopped
  • ¼ to ½ jalapeno, diced
  • ¼ bell pepper, diced
  • ½ red onion, diced
  • 1 tbsp. olive oil
  • juice of ¼ to ½ fresh lime
  • salt and pepper to taste

Directions
  1. Put cilantro, garlic, jalapeno, bell pepper and onion into food processor.
  2. Pulse until finely processed.
  3. Remove from processor and set aside in a medium bowl.
  4. Add tomatoes to processor and pulse until tomatoes are to the texture you prefer: i.e. chunky versus minced.
  5. Put tomatoes into bowl of cilantro mixture and stir all ingredients together.
  6. Add olive oil and lime juice. Salt and pepper to taste.
