Ingredients
  • 1 4-oz. can of Chunk White Albacore tuna in water (I use BumbleBee)
  • 1 carrot
  • 1 dill pickle
  • Celery salt
  • 1 tbsp. Smart Choice Mayonaisse with no trans fats
  • 1 tsp. yellow mustard
  • Handful of greens – spinach, lettuce, any kind, whatever is in your fridge
  • 2 slices of whole wheat bread, 7-grain bread or artisan bread

Directions
  1. Peel carrot, cut off top and bottom. Shred carrot on a box grater. Eat the last little nub of carrot so you don't slice your fingers. Cut pickle into 1/4 inch pieces. Pop bread pieces into toaster.
  2. Drain tuna by squeezing the opened can top against the contents over the sink.
  3. In a medium mixing bowl combine tuna, shredded carrot, pickle pieces, mayo, mustard, and a quick sprinkle of celery salt until well-blended.
  4. Put a heaping mound of tuna mixture on one of the toasted bread slices. Spread tuna around in an even layer about 3/4 inch thick. Sprinkle top with celery salt. Apply greens over top and put other slice of bread on top. Voila! Lunch! (When in season, a nice fat slice of a garden fresh heirloom tomato is a nice option too.)
  5. Use a fork to eat the tuna off of the plate that fell out when you were eating. I usually eat the rest of the tuna out of the bowl too.

I am co-hosting my daughter's baby shower in 2 weeks and I am planning on making tuna salad sandwiches. This recipe is different with the carrots. I think I may have found the recipe for the tuna salad I will make. Thanks.


I also think the carrots make this a bit more unique then the usual mix, can't wait to try it.


And I thought I was the only one who ate mustard in tuna salad!


I made this because I was curious about carrots and mustard in tuna salad. It was really good! Not made quite according to instructions as I used regular mayonnaise and didn't have a dill pickle (used sweet pickle relish). I may add some onion next time. But definitely eaten according to instructions. Thanks!


I made this today for lunch and I was out of pickles and didn't have any celery either. So I sliced up the carrot into 1/8 -1/4 inch slices instead of shredding it and I added a tablespoon of Dijon mustard instead of a teaspoon of yellow. It was a good variation. I liked it that way. Just FYI.

This sounds really good!!I've never had carrots in my tuna salad but it helps get more veggies in for the day =O) I know this sounds weird, but my sister made me tuna salad once when I was little (yes I loved it then too) and she wanted to make it extra special. She added just a little vanilla!! and now I always do too, it really adds something. Try it sometime =O)
