How to make it

  • Cook beef in margarine. Add onion,chili powder and salt. Soten tortillas one at a time in enchilada sauce or fry in oil. Spoon on meat filling,roll up and arrange in baking pan seam side down. Pour on enchilada sauce,sprinkle with cheese. Bake at 350 for 15-30 mins. Serve hot with a little additional onion on top for garnish.
  • Can also sprinkle with a little cilanto if desired.

    Made these the other night and they were wonderful...The only thing I did different was I halved the recipe, kept the cheese amount the same and added a diced large jalapeno to the onion mixture because we like heat...Served with Spanish rice...Got my 5.
