Almond Champagne Chicken

- 4 chicken breasts, boned and halved shopping list
- 1/2 cup butter shopping list
- 2 tablespoons finely chopped shallots shopping list
- 1/4 pound chopped fresh mushrooms shopping list
- 2 tablespoons flour shopping list
- 1 cup champagne or dry white wine shopping list
- salt and pepper shopping list
- 1/3 cup whipping cream shopping list
- 1/2 cup sliced toasted almonds shopping list
How to make it
- Place chicken breasts in a shallow baking dish and pour 1/4 cup melted butter over them.
- Bake at 350 degrees for 30 minutes until tender.
- Melt remaining 1/4 cup butter in a saucepan.
- Add shallots and chopped mushrooms and saute over low heat until soft but not brown.
- Sprinkle with flour; add the wine, stirring constantly over medium heat until sauce is thickened and alcohol is evaporated from wine.
- Season with salt and pepper.
- Transfer chicken breasts to a heated serving platter to keep them warm.
- Stir pan drippings into the sauce and add cream.
- Heat through over low heat.
- Spoon sauce over chicken and sprinkle with toasted almonds.
