How to make it

  • Place chicken breasts in a shallow baking dish and pour 1/4 cup melted butter over them.
  • Bake at 350 degrees for 30 minutes until tender.
  • Melt remaining 1/4 cup butter in a saucepan.
  • Add shallots and chopped mushrooms and saute over low heat until soft but not brown.
  • Sprinkle with flour; add the wine, stirring constantly over medium heat until sauce is thickened and alcohol is evaporated from wine.
  • Season with salt and pepper.
  • Transfer chicken breasts to a heated serving platter to keep them warm.
  • Stir pan drippings into the sauce and add cream.
  • Heat through over low heat.
  • Spoon sauce over chicken and sprinkle with toasted almonds.
