Almond Champagne Chicken Recipe
I have not made this recipe.....Its from the *A Cookbook of Pinehurst Courses*....another recipe that would be served for Sunday company.....I can almost taste this now...

Ingredients
  • 4 chicken breasts, boned and halved
  • 1/2 cup butter
  • 2 tablespoons finely chopped shallots
  • 1/4 pound chopped fresh mushrooms
  • 2 tablespoons flour
  • 1 cup champagne or dry white wine
  • salt and pepper
  • 1/3 cup whipping cream
  • 1/2 cup sliced toasted almonds

Directions
  1. Place chicken breasts in a shallow baking dish and pour 1/4 cup melted butter over them.
  2. Bake at 350 degrees for 30 minutes until tender.
  3. Melt remaining 1/4 cup butter in a saucepan.
  4. Add shallots and chopped mushrooms and saute over low heat until soft but not brown.
  5. Sprinkle with flour; add the wine, stirring constantly over medium heat until sauce is thickened and alcohol is evaporated from wine.
  6. Season with salt and pepper.
  7. Transfer chicken breasts to a heated serving platter to keep them warm.
  8. Stir pan drippings into the sauce and add cream.
  9. Heat through over low heat.
  10. Spoon sauce over chicken and sprinkle with toasted almonds.
