Ingredients
  • 2 tsp instant espresso coffee
  • 2 tbs hot water
  • 6 ounces semi sweet chocolate
  • 1 ounce bittersweet chocolate
  • 11/2 cups whipping cream slightly warmed
  • 1/2 cup whipped cream(to decorate)
  • chocolate covered coffee beans (to decorate)
  • Crust:
  • 2 1/2 cups crushed chocolate wafers
  • 2 tbs superfine sugar
  • 5 tbs melted butter

Directions
  1. Combine crust ingredients.
  2. Press into 9 inch pie plate(bottom and sides)
  3. Chill
  4. Dissolve coffee in water and set aside
  5. Melt chocolate in double boiler then set the bottom of the pan in cold water to cool.
  6. Whip the cream until light and fluffy.
  7. Add cream and whip until the cream just holds it shape
  8. when chocolate is room temp fold gently into cream
  9. pour into cookie crust and chill until firm
  10. decorate with piped whipped cream and coffee beams if desired.
