Ingredients
  • 2 dozen chocolate cupcakes. You can make these from scratch, from a box, or buy some from you local bakery
  • 1 recipe of cream cheese frosting (recipe to follow) or any white icing recipe you like
  • 1/4 cup of mini-chocolate chips. You really only need 2 per cupcake but it's nice to have extras handy
  • 1/4 cup of large Guittard Chocolate Chips. Depending on how big you make your groundhog, you might be able to use regular size chips, but to emulate the size I made, I recommend the big chips. You can find these at Williams and Sonoma or in the bulk section of your grocery store. For those that live in the Seattle area, Central Market sells them in the bulk isle.
  • 1 bag of Tootsie Rolls. Look for the next size up from Midgees, but if that's all that you can find, that's ok. Just get a lot of them
  • 24 or so Wilson white chocolate Candy Melts (you can find these at Michaels Stores)
  • Time! Make sure you allow for a lot of time to practice getting the shape of a groundhog. The first couple will be a little tough, but with patience, you'll get into a groove and it will get easier

Directions
  1. 1. Make the cupcakes per the recipe instructions. Get a small bowl ready and grab a cupcake. Using a small spoon or chopstick, make a small whole in the center of the cupcake. The whole should be about the size of a quarter. Save the pieces of cake the fall out into the bowl and set aside.
  2. 2. Prepare the frosting -2 packages cream cheese, softened, 1/2 cup butter, softened, 2 cups sifted confectioners' sugar, 1 teaspoon vanilla extract. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the fridge.
  3. 3. Do an Google image search for Groundhog. Not a drawing, but an actual photograph of a real groundhog. Get yourself familiar with what they look like. Study the same of their head, where there nose is in relation to their eyes and ears. Really internalize this because when you get to the point where you're ready to mould the heads, you will use this reference. I printed out a picture and taped it to my kitchen cabinet so I could look at it while I was making them.
  4. 4. *PSA*- Really wash your hands good. Be sure to clean under your nails too. This should be a given but since your hands will be all over these little guys, you want your hands and your workspace super clean. You might even consider wearing latex gloves if you have them. This will avoid your finger prints showing up on body.
  5. 5.Make the teeth: Take one white wafer, flat side up on a cutting board. Using a very sharp knife, cut off about a 1/4-1/8 inch off of each side of the circle so that you're left with a rectangle shape. that's rounded at the top and the bottom. Use the knife to score down the center, making an obvious groove. Cut in half. You just made two teeth! Continue making them until you have 26. Some will break as you're assembling them so its great to have extra just in case. Get the chocolate chips within close reach.
  6. 6.Unwrap 3-5 Tootsie Rolls and put into a microwave safe bowl. Microwave 10 to 15 seconds -- check after 5 seconds since every microwave is different. You do not want to cook the candy. You just want to get it warm to the point that you can shape it. Take the clump of warm Tootsie rolls and knead them together to form a ball. Be sure to really mix the separate pieces together. From the ball, mould the shape into a long cube shape, tapering it at one end and flattening the other. On the tapered end, pushed in each side with a teaspoon to sort of dent each it. Then exaggerate the dent with your finger or chopstick to form a little ear. Repeat the on the other side. Seriously though, it's just a matter of playing with the malleable Tootsie roll. It took me about an hours to get it right but once I did I had a good little process down.
  7. 7. NOSE: While the candy is still warm, take the big chocolate chip and turn it upside down so the flat side is up. Push it into the rounded front of you groundhog so it matches the picture. TEETH: Use the skinny end of the chop stick to make a little slit or hole directly underneath the "nose". Take the teeth you made (one of them) and push it into the little hole you just made. EYES: Put the eyes on by pushing a mini-chip into the warm chocolate, flat side up.
  8. Push them into the Tootsie roll so that it isn't just sitting on top of the candy, but is part of it. So you should have a head with a nose, two eyes and a cute little nose. Yey!
  9. 8. Get yourself a cupcake and stick a groundhog into it. Test to make sure the hole you made is big enough. Re-cut the hole if needed. Don't use the groundhog to make the hole, as it might split the cupcake in half. Frost each cupcake with a generous amount of frosting, but try to avoid the center of the cupcake. Sprinkle the frosting with the cupcake crumbs. This looks like dirt on the snow. I know, too cute, huh? :-)
