Sweet Potato Pound Cake

- 1 cup unsalted butter shopping list
- 2 cups granulated sugar shopping list
- 1-1/2 cups mashed cooked sweet potatoes shopping list
- 4 eggs shopping list
- 3 cups all-purpose flour shopping list
- 1/4 teaspoon baking soda shopping list
- 1/2 teaspoon ground nutmeg shopping list
- 1 teaspoon cinnamon shopping list
- 1 teaspoon vanilla extract shopping list
- 1/2 cup chopped pecans shopping list
- 1/2 cup flaked coconut shopping list
- Icing: shopping list
- 16 ounces confectioners' sugar shopping list
- Grated rind of one orange shopping list
- Grated rind of one lemon shopping list
- juice of one lemon shopping list
- juice of one orange shopping list
How to make it
- Cream butter and sugar then add sweet potatoes and beat until light and fluffy.
- Add eggs one at a time beating well after each addition.
- Combine dray ingredients and stir into creamed mixture.
- Add vanilla, nuts and coconut.
- Pour mixture into greased bundt pan and bake at 350 for 1 hour and 15 minutes.
- Spread with icing while cake is still warm.
- Make icing by combining all ingredients slowly adding enough orange juice to make spreading consistency.
