Blueberry Lemon Pancakes Recipe
The lemon zest and juice in these pancakes give them a delicious edge at breakfast.

Ingredients
  • 1 egg
  • 1 c. flour (white is best, but for health minded use stone ground whole wheat)
  • ¾ c. milk (skim or buttermilk)
  • 1 T sugar
  • 2 T oil
  • 1 T baking powder
  • ½ tsp salt
  • 2 tsp lemon zest
  • 1 tsp lemon juice
  • ½ c. fresh blueberries

Directions
  1. Beat egg until frothy
  2. Fold in remaining ingredients except blueberries, stirring just until smooth.
  3. Gently fold in blueberries.
  4. Note: You can use frozen berries of any kind or mix--just put them in the fridge covered with Saran wrap the night before. Makes about 3-4 pancakes for each person.
