Seafood Crepes

- crepes shopping list
- 3/4 C flour shopping list
- 1Tbsp sugar shopping list
- 1/2 tsp salt shopping list
- 3 eggs shopping list
- 1 C milk shopping list
- 1 Tbsp butter shopping list
- crepe Filling shopping list
- 1pkg of 12 oz cooked frozen shrimp shopping list
- 1pkg 16oz fillet cooked and flaked shopping list
- 1pkg broccoli spears-cooked shopping list
- 2 Tbsp butter shopping list
- 3 Tbsp flour shopping list
- 2 cups milk shopping list
- 3/4 cup shredded swiss cheese shopping list
- 1/3 cup grated parmesan cheese shopping list
- 1/3 cup dry white wine shopping list
- Silvered almonds(optional) shopping list
How to make it
- CREPES
- Beat eggs until mixed in a large bowl. Sift flour,sugar,salt over eggs and blend until smooth. Stir in milk and melted butter.
- Heat 8" fry pan and grease lightly. Pour batter in tilting pan to cover bottom (about 1/4 to 1/3). Cook 1-2 minutes-turn and cook 1 minute more, Roll up and place on cookie sheet. (I layer between wax paper)Keep warm. Repeat with rest of batter greasing pan before each crepe
- CREPE FILLING
- Saute onion in butter, blend in flour. Add milk stirring constantly over medium heat until thickened. Add swiss and parmesan. Stir until melted and add wine. To 1/2 cup sauce gently fold in fillet and shrimp. Unroll crepes and on each crepe place 2 broccoli spears with flowered ends sticking out. Add 2 heaping Tbsp of sauce mixture and reroll.
- Place on lightly greased baking dish. Pour remaining sauce over all the rolled crepes and sprinkle wiht almonds (I omit these) and use cheede or toasted crumbs) .
- Bake at 350 degree (F) oven for 30 minutes.
- This was passed down in an old cookbook . Just be creative so much can be done with these crepes
