How to make it

  • Preheat oven to 350 degrees. Rub a small baking dish or 9 inch glass pie dish with olive oil
  • Process olives, rosemary, garlic, salt, and pepper in food processor. With machine Add olive oil, honey and lemon juice and process to make a paste.
  • Loosen skin from chicken and spoon a heaping tablespoon of olive mixture under skin of each piece. Rub any remaining olive mixture over top. Bake the chicken for 45 minutes or until tender.
