Ingredients
  • Olive oil for rubbing dish
  • 1/2 cup pitted Kalamata olives
  • 1 1/2 teaspoons finely chopped fresh rosemary
  • 1 garlic clove
  • pinch of salt (about 1/8 teaspoon)
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 tablespoons robust extra virgin olive oil (or whatever you’ve got)
  • 2 teaspoons honey
  • 1 teaspoon fresh lemon juice
  • 2 bone-in, skin-on chicken breast halves

Directions
  1. Preheat oven to 350 degrees. Rub a small baking dish or 9 inch glass pie dish with olive oil
  2. Process olives, rosemary, garlic, salt, and pepper in food processor. With machine Add olive oil, honey and lemon juice and process to make a paste.
  3. Loosen skin from chicken and spoon a heaping tablespoon of olive mixture under skin of each piece. Rub any remaining olive mixture over top. Bake the chicken for 45 minutes or until tender.
