I love parsnips! We make a parsnip and carrot roast each Thanksgiving and it is one of my favorites. This sounds awesome with the curried dip. Can't wait to put this out for guests.

I've recently become addicted to oven roasted parsnips, so I have no doubt that I will love this one - the curry dip will add a whole new flavor dimension to the parsnips!
