Easy Mexican Pork Chop Dinner Recipe
Delicious pork chops are cooked up Mexican-style with tomatoes, corn, beans, and rice. Got this online a long time ago, and have modified it somewhat.

Ingredients
  • 1 tablespoon vegetable oil
  • 4 boneless pork chops
  • 1 t cumin
  • 1 dash cayenne pepper
  • 1 t seasoned salt
  • 1 t pepper
  • 1/2 med. onion, diced
  • 2 (14.5 ounce) cans chopped stewed tomatoes, with juice
  • 1 (8.75 ounce) can whole kernel corn, drained
  • 1 (8 ounce) can black beans, drained
  • 1/2 cup uncooked long grain white rice
  • 1 (4 ounce) can diced green chilies, drained

Directions
  1. Preheat oven to 350 degrees
  2. Mix seasonings together and lightly rub over chops
  3. Heat the oil in a skillet over medium heat.
  4. Brown the pork chops with onions about 5 minutes on each side. Remove chops from skillet and drain oil.
  5. Mix the tomatoes, corn, kidney beans, rice, and chilies in same skillet and bring to a boil.
  6. Cook and stir for 1 minute, until heated through.
  7. Transfer the tomato mixture to a baking dish. Arrange the browned pork chops over the mixture.
  8. Bake covered 30 minutes in the preheated oven.
  9. Uncover, and continue baking 10 minutes, until rice is tender and pork has reached an internal temperature of 160 degrees

This sounds really good. My hubby and I eat a lot of pork, and I love black beans and rice so I'm going to give this a try.


This recipe is excellent! I didn't have black beans, so I used Mexican chili beans. I served it with buttered cornbread!

I made this, but added 2 cloves of garlic while sauteing the pork and onions. I left the onions and garlic in the pan and added a chopped red bell pepper and sauted that for a couple of minutes before adding the other ingredients. Then I added a sprinkling of oregano, more cumin, salt and pepper to the tomato mixture. It turned out good, but I don't think it would have without my alterations.


This turned out great! I couldn't find any chiles at the store, so I replaced it with diced jalapenos. I also left out the whole kernel corn. There was a lot of the mixture after the pork chops were gone - if you mix sour cream with it, it tastes like enchilada filling. Will definitely be making again.
