What do you do when the family wants dessert, and they want it NOW? This is really easy, not to mention tasty. Also a good way to have "apple pie" w/out rolling out crust and firing up the oven.

Ingredients
  • 3 large golden delicious apples, peeled,cored,and chopped
  • 1/4 cup sugar
  • 1/4 cup water
  • 1/2 tsp cinnamon
  • 16 shortbread cookies, crumbled
  • 1 pint vanilla ice cream

Directions
  1. Combine the apples, sugar, water, and cinnamon in a med.
  2. saucepan and simmer over medium heat.
  3. Cover and stir occasionally, for 15 minutes or so.
  4. Remove the lid and cook for 5 more minutes
  5. The apples should be soft, and liquid almost evaporated.
  6. Sprinkle half of the cookie crumbs in 4 bowls or dessert glasses.
  7. Divide the ice cream between the bowls and top each with a quarter of the apples.
  8. Sprinkle the tops with remaining crumbs and serve right away.
