White Coconut Tiramisu Recipe
A twist on Tiramisu, without the coffee.

Ingredients
  • 18 sponge biscuits (Spanish style) or lots of sponge fingers
  • 160ml Malibu
  • 200ml Full fat milk
  • 500g Mascarpone cheese
  • 2 egg yolks
  • 1 Egg white
  • 125g caster sugar
  • 2 Meringue nests
  • 6 Coconut delights
  • Dried coconut to sprinkle on top.

Directions
  1. Blend sugar and egg yolks together ‘til pale and creamy.
  2. Fold in mascarpone and whisk ‘til blended.
  3. Whisk up egg white ‘til soft peaks and fold into mascarpone mixture.
  4. Mix milk and Malibu and place in shallow container – then dip each sponge finger into it and use 9 to line a shallow dish.
  5. Use half the mix to cover it, sprinkle with one crushed meringue and chop up 3 coconut delights and sprinkle with those as well.
  6. Repeat sponge layer soaked in juice and top with remaining mascarpone cheese mix, crushed meringue and chopped coconut delight.
  7. Sprinkle on top with dried coconut.
  8. Chill for at least 4 hours.
  9. Serves 6 generously or 12 smaller portions.

I had to come up with something as an alternative as my hubby hates coffee, but this he loves!
