How to make it

  • Blend sugar and egg yolks together ‘til pale and creamy.
  • Fold in mascarpone and whisk ‘til blended.
  • Whisk up egg white ‘til soft peaks and fold into mascarpone mixture.
  • Mix milk and Malibu and place in shallow container – then dip each sponge finger into it and use 9 to line a shallow dish.
  • Use half the mix to cover it, sprinkle with one crushed meringue and chop up 3 coconut delights and sprinkle with those as well.
  • Repeat sponge layer soaked in juice and top with remaining mascarpone cheese mix, crushed meringue and chopped coconut delight.
  • Sprinkle on top with dried coconut.
  • Chill for at least 4 hours.
  • Serves 6 generously or 12 smaller portions.
