Strawberry Snowbank Pie Recipe

Ingredients
  • 1 quart strawberries
  • 1 1/4 cups sugar
  • 1/2 cup water
  • 1/2 tsp cream of tartar
  • 2 egg whites
  • pinch salt
  • 1/4 tsp almond extract
  • 1 9" baked pie shell

Directions
  1. wash, hull and drain berries. Fill pie shell with whole, unsweetened berries. Put the prettiest berries in the center.
  2. Mix sugar, water and cream of tartar in saucepan. Cover and bring to a boil. Uncover, and cook until syrup spins long threads (240 degrees on candy thermometer).
  3. Stiffly beat egg whites and salt them. Gradually pour sugar mixture into egg whites, beatting constantly. Beat until mixture piles into peaks. Add almond extract.
  4. Pile egg white mixture onto pie, leaving center uncovered. Cool. do not put into refrigerator

I feel like I've been stuck in a snow bank for months now..lol..maybe this recipe will make it seem less cold here!
