Three-Bean Salad Recipe
Using different types of onions, as well as green peppers, is a slight twist to the bean salad you may remember. My family loves this recipe!

Ingredients
  • 1/2 c. oil (canola or vegetable)
  • 1/2 c. sugar (fructose for diabetics)
  • 1/2 c. vinegar (cider or white)
  • 1 tsp. salt
  • 15-oz. can of green beans (regular, string, or half of each), drained
  • 15-oz. can of yellow wax beans, drained
  • 15-oz. can of kidney beans (light, dark, or half of each), drained
  • 1/4 c. chopped yellow onions
  • 1/4 c. chopped white onions
  • 1 chopped shallot
  • 1/2 c. chopped green bell pepper

Directions
  1. Combine the first four ingredients until well-blended.
  2. Add the rest of the ingredients and stir until combined well.
  3. Refrigerate until ready to serve.
  4. ***This tastes better if allowed to marinate overnight.

Alterations


You may use just one or two types of onions. You may also substitute different types of onions or peppers. This is also good without peppers. The possibilities are endless, and this recipe can be tailored to fit your individual tastes and preferences. I substitute fructose for sugar for the diabetics in my family.
