I had this at the Marine Club in Ashland Wisconsin and had to have the recipe. They served it topped with popcorn!

Thank you for this post! I used to work at a restaurant/brewery that makes an excellent beer and cheese soup. This sounds a lot like their recipe. I had forgotten about it- I think I'll make this this weekend! AWESOME POST!!

Made the soup last night- good recipe! It had an excellent flavor- but I would not add salt. I added 1/4 tsp to the flour/mustard mixture and the soup was too salty. I think it might have still been very salty even without adding salt, so next time I will probably use unsalted butter also. I will be making it again :)

Hey this sound wonderful i love cooking with beer but i had never heard of this soup so i will have to try it. I usually add beer to my chili beans and to other recipes. So i will have to try this.

I can't say as I have had the pleasure of trying this; although I live in Wisconsin. The mention of popcorn on the top did ring some bells. I'll just have to find a local brewery that service this ;-)
