Ingredients
  • 6 canned or dried red chilies
  • 3 cloves garlic for sauce
  • 1 tablespoon crushed oregano
  • 16 ounces cola
  • 3 pound pork loin roast
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 6 cloves garlic for stuffing roast
  • 3 tablespoons vegetable oil

Directions
  1. If using dried chilies boil in water and let stand until soft then drain.
  2. Remove stems, seeds and veins and process with garlic, oregano and 4 ounces of cola in food processor.
  3. Salt and pepper roast.
  4. Make slits in various places and insert garlic cloves.
  5. Brown roast on all sides in oil then place in baking pan.
  6. Spread chili mixture over meat and pour on remaining cola.
  7. Bake at 350 for 3 hours.
  8. Let stand 15 minutes before serving.
