- I did everything by eye so I'll attempt to put it into measurements for you. Keep in mind these aren't exact, use your own judgement and taste the batter a lot. shopping list
- 2 to 2 1/2 cups of all-purpose flour shopping list
- 1 cup granulated sugar shopping list
- 1/2 cup confectioner's sugar shopping list
- 1/2 cup of dark brown sugar shopping list
- 1 egg, lightly beaten shopping list
- 2/3 cup of Unsweetened Baker's chocolate shopping list
- 1 cup Swiss Mocha Powder from International coffees + more for on top of cookies if desired shopping list
- 2 whole sticks or 1 cup of unsalted butter, softened shopping list
- 1 tbspn cinnamon + more for insides shopping list
- 1 tspn salt shopping list
- 1 tspn baking powder, which I forgot about. (That explains why the cookies came out flatter than the funny pages.) shopping list
- Whole boatloads of Marshmellow Fluff. Yummy!! shopping list
How to make it
- Preheat the oven to 350F.
- With a mixer or your hands, meld the butter with the flour, sugars, cinnamon, mocha powder, cocoa powder, salt, and baking powder.
- Add the egg and beat until smooth dough forms.
- Put small amounts onto an ungreased cookie sheet and bake at 350 for about 10 minutes, or until edges are slightly browned.
- Remove, let stand for 2-5 minutes, then with a spatula, transfer cookies to a paper towel-lined plate and let cool completely.
- When the cookies are cooled, use a butter knife to spread the yummy, gooey fluff over one, sprinkle a bit more cinnamon and form into a sandwich. (Be careful, they're delicate!)
- I could be off about the servings, my roommate and I gobbled up a whole bunch before they even became sandwiches, so it could make as many as 30. Who knows? They're awesome.
